Nicholas Kaltsas began working in his family’s restaurants from a young age, honing his skills and learning the craft. He continues to use his father’s recipes, infusing them with a modern, contemporary twist.
Originally starting a Greek restaurant, Kaltsas found his passion in serving upscale breakfast and lunch, leading to the creation of FRESH. Known for its homemade sticky buns, FRESH’s slogan, “Curated for right now,” ensures guests receive the latest trends in breakfast and lunch fare.
Kaltsas’ wife Jess and daughter Addie are often found helping around the restaurant. Addie is known for standing outside, encouraging pedestrians to stop in for a bite. She then waits on tables, earning tips — a young Greater Reading entrepreneur in the making.
A popular menu item is the Short Rib Quesadilla, featuring roasted short rib in a cheddar quesadilla with hollandaise and a house-made mild pepper sauce.
